Kathy's had a few memorable moments, but her favourite was when we catered for a particular event in The Great Hall. Kathy says: “The guests were a little merry and some of their long-standing traditions didn’t suitably fit the restrictions of the 12th century hall. Trying to serve a formal dinner to 180 enthusiastic guests was both entertaining and a challenge. It‘s the event we all still talk when we all catch up for social events nearly 16 years later!”
My involvement in catering for royalty is also something else I am very proud of. Especially the visits of HRH Prince of Wales and his wife HRH Diana Princess of Wales, her Majesty the Queen and Prince Phillip. I also remember a fun evening serving at a charity auction hosted by the Lord Lieutenant of Hampshire, Mary Fagan. The master of ceremonies was Alan Titchmarsh and his quick wit and off the cuff remarks had us all in stiches.
I have noticed a great change in food trends over my 29 years: the customers now want much healthier, smaller meals, lots more grab and go options rather than the cream doughnuts and steak during their hour lunch break of the mid 1990’s.
