Menus are designed so that children have the right amount of proteins, carbohydrates, sugar and fat in their diets. Here we share a favourite recipe, which is one that allows fruit to be used, instead of as much sugar, in a regular rock cake mix.

It’s easy to prepare, so why not make it with your children to encourage them to cook during the school holidays? They are sure to love the baking as much as the eating!

Rockcakes

Apple Sultana Rock Cakes

Makes 10 cakes
80ml vegetable oil
300g wholemeal flour
Half tea spoon baking powder (10g)
Half tea spoon ground cinnamon (10g)
2 small roughly chopped and peeled bananas (130g) banana 
1 egg
40g caster sugar
1 teaspoon vanilla favouring
1 medium sized apple (100g)
75g sultanas
50ml water

Pre heat oven to 180°C or gas mark 4 and using a teaspoon of the oil, grease a tray.

In a bowl mix together the flour, baking powder and cinnamon.

Mash the banana in a bowl, and mix the egg in well, then add the remaining oil, vanilla flavouring and 50ml water.

Peel and core the apple and then grate into a separate bowl.

Combine mixes together, and then add the grated apple to the mix. Fold in the sultanas.

Divide the mix into 10 rounds, place on the tray and bake for 20 minutes or until cooked. Allow to cool.
