Breezy banana bread and butter pudding

Ingredients
- 2 slices bread
- 25g butter
- 1 sliced banana
- 1 egg
- 40g soft, light brown sugar, plus 1/2 tbsp extra
- Large pinch cinnamon
- 225ml milk
- 1/2 tbsp flour
Method
- Make some extra buttery toast and cut each slice into 6 roughly equal pieces
- Stick it butter side up in a microwavable dish and scatter the banana on top
- Mix the eggs, sugar, cinnamon and milk in a jug
- In a small bowl, toss in the flour with a little milk and mix until smooth. Add to the jug
- Pour the mixture over the bread and banana, with a good sprinkling of sugar
- Bake, uncovered, in the microwave on high for 8 to 10 minutes
- Stand for a further 5 minutes and it’s ready to serve
