Breezy banana bread and butter pudding

Serves: 2 people

Prep time: 10 minutes

Cooking: 15 minutes


  • 2 slices bread
  • 25g butter
  • 1 sliced banana
  • 1 egg
  • 40g soft, light brown sugar, plus 1/2 tbsp extra
  • Large pinch cinnamon
  • 225ml milk
  • 1/2 tbsp flour


  1. Make some extra buttery toast and cut each slice into 6 roughly equal pieces
  2. Stick it butter side up in a microwavable dish and scatter the banana on top
  3. Mix the eggs, sugar, cinnamon and milk in a jug
  4. In a small bowl, toss in the flour with a little milk and mix until smooth. Add to the jug
  5. Pour the mixture over the bread and banana, with a good sprinkling of sugar
  6. Bake, uncovered, in the microwave on high for 8 to 10 minutes
  7. Stand for a further 5 minutes and it’s ready to serve
